Speculoos Cupcake

​This cupcake is dedicated to Chelsea, who first suggested a Lotus caramelized biscuit-inspired cupcake. Back then, I knew of the existence of Speculoos and Biscoff, the latter being the American version, which were the paste form of those biscuits - like how, say, Nutella is the paste form of chocolate plus hazelnuts.

I first made these cupcakes completely from scratch, blending the biscuits and grinding them into a paste. It was so much hard work that I decided there was no way I was going to make it again until I found Speculoos or Biscoff, both of which are unavailable in Singapore.

It was only on my trip to New York that I found Speculoos at the Wafels & Dinges trucks! Completely overjoyed, I bought three full jars back - who knows when I will get to buy them again right? But as luck would have it, Chelsea went to Europe that same holiday and bought me a jar of the real deal by the Lotus brand. 

And these cupcakes made their first debut, with the real Speculoos paste, during Christmas 2012. (:
