    ​Lemon Blueberry Cupcakes

    This is a story that must be told. To bake these cupcakes, I had to rush them out overnight.

    ​

    I made them twice. I failed both times. I couldn't understand why; I followed the recipe to a tee but I always ended up with a lumpy disgusting wet batter that wouldn't combine. I called my boyfriend at 12am and was so distraught that he came over and persuaded me to try again. I thought I'd over-beat the batter or something, so I was extra careful. Yet, the same thing happened.

    I dumped the whole batter in the trash and started panicking, almost hysterical. I was down to only 3 eggs and dangerously low on flour. At 1am I just didn't want to take any more risks.

    ​

    But he went, "can we just give it one more try?" He cut and measured the butter, and said "if it doesn't work, I'll drive out to buy eggs and flour for you." I gave in, skeptical however, thinking he was just going to end up with the same batter as I did.

    ​

    Yet, he focused on following the recipe religiously and persisted. The second time I checked on him, the batter was well-incorporated and smooth, exactly how it should be. I didn't know what to say. He grinned and asked if it looked alright; I said yes. And instead of telling me "I told you so", he said "see, don't ever give up."

    ​

    At 2am we sat on the kitchen floor, waiting for the cupcakes to rise and smelling lemons and blueberries from the oven. My boyfriend is my best friend. (:
